Bean and Corn Toasties
|My lunch: Bean and Corn Toasties|
2 Gluten free corn tortillas
1 tablespoon five bean mix (drained and washed)
1 tablespoon canned corn kernels
1 tablespoon tomato salsa
25g reduced fat tasty cheese (sliced or grated.)
2 cups fresh salad vegetables
2 teaspoons lime juice
couple of drops sauce
Put the beans, corn, salsa and cheese between two corn tortillas, and put in a sandwich press. (If you don't have a sandwich press, put under the grill, and turn once first side is toasted.)
While your sandwich is toasting slice the vegetables and pile them on the plate. Sprinkle with lime juice and Tabasco.
Once tortilla "sandwich" is toasted, and the cheese melted, cut into quarters and serve on the plate with salad.
All done: a quick, easy, and filling lunch for one.
