Fantastic Freezeable Food: Crustless Zucchini Quiche

Another great recipe for the freezer:

Crustless Zucchini Quiche

5 eggs
1 tablespoon olive oil
1/4 cup gluten free self raising flour
1/2 cup lactose free milk
4 tablespoons grated parmesan
3 medium zucchinis, grated
3 medium carrots, grated
1 medium onion, grated (hint - don't peel or cut the root end of the onion, then you can grate it without fumes.)

Beat eggs, oil, flour and milk together.
Add other ingredients.
Pour into a flan or quiche tray.
Microwave for about eight minutes - with rests every two minutes, until set.
Alternatively: preheat oven to 180 degrees C, and bake 15 to 20 minutes.

Serves 6-8.
