Fantastic Freezeable Food: Corn Frittata

Here's another recipe that's easy to cook and freezes well for those times there's just no time or energy left to prepare a meal.

Corn Frittata

Eight eggs
1 cup frozen corn kernels - allowed to defrost
1 tablespoon grated parmesan cheese
1/4 cup lactose-free milk
1 tablespoon gluten-free flour

Preheat oven to 180 degrees C.
Beat eggs.
Add other ingredients.
Mix well.
Pour into a 20cm x 20cm oven tin.
Bake for 15 to 20 minutes until set, and lightly browned.

Serves: 4-6.
